Carrot Recipe 1: Carrot Dosa

  1. Grind cubed carrots, a small piece of ginger, half a teaspoon of cumin seeds and one or two green chillies and add into dosa batter. Make dosas like you make your normal dosas.

Carrot Recipe 2: Grated Carrot Uthappams

  1. Spread dosa batter like you normally do for making dosa, place the grated coconut in the middle of dosa and top it with a half a teaspoon of cheese/cream/spread. Cover and cook dosa. Remove the lid, fold and serve.
  2. Mix grated carrot and little sooji/rava into the dosa batter. Saute finely chopped onions and add into the batter. Mix well. Prepare uthappams now.

Carrot Recipe 3: Carrot Idli

  1. Grind cubed carrots, a small piece of ginger and half a teaspoon of cumin seeds. Add to the idli batter. Make idlis

Carrot Recipe 4: Carrot Paneer Gravy

  1. Grind cubed carrots, oinion, tomato, cinnamon, clove, ginger garlic paste with a little milk into a smooth paste in a blender.
  2. Heat oil in a kadai. Add the ground mixture into the kadai. Saute well.
  3. Add chilli powder, salt and turmeric powder. Let it cook well. Add little more milk and hot water and let it cook till the consistency you want in a low flame.
  4. Add Fried Paneer cubes. Cook for few more minutes. Turn off the stove.

Carrot Recipe 5: Carrot Rice

  1. Heat oil in a kadai. Splutter cumin seeds, a small piece of cinnamon, a clove.
  2. Add chopped onion and green chillies. Saute well.
  3. Add grated carrot and salt. Let the carrot cook.
  4. Add cooked rice. Mix well.
  5. Add a teaspoon or two of coarsely grounded peanuts.

Carrot Recipe 6:Carrot Chapati

  1. Grind carrot, add to the atta along with salt, turmeric powder, chilli powder and little cumin seeds. Knead To make a smooth and soft dough. Prepare chapatis.

Carrot Recipe 7: Carrot Paratha

  1. Heat oil, crackle cumin seeds, add grated carrot, salt, chilli powder and turmeric powder.
  2. Cook till the carrot is half cooked.
  3. Spread the kneaded atta using a rolling pin. Keep a portion of the cooked carrot. Fold from all the sides making into a ball with carrot stuffing inside.
  4. Spread it again.
  5. Make parathas using ghee or butter in a tawa.
