Chicken Soup is a great thing to relish during monsoons and winters. Hot soup on a cold day is so satisfying. That aside, they also provide a relief to cold, increases energy levels of the body and boosts good health.
The same recipe can be followed for preparing mutton soup as well.
This is a very simple recipe requiring a very few ingredients and oil is not required at all.
Chicken/Mutton – 250g
Ginger Garlic Paste – 1 teaspoon
Onion – 1 big, chopped
Tomato – 1 big, chopped
Coriander leaves – few strands, washed and chopped
Green chillies – 1 or 2, slit (can add as per your taste)
Turmeric Powder – 1/4 teaspoon
Coriander Powder – 3/4-1 teaspoon
Cumin powder – 1/4 teaspoon
Fennel Seeds Powder – 1/4 teaspoon
Pepper Powder – a little [optional)
Salt – as required
Add all the ingredients, except pepper powder in a pressure cooker. Add 300-400 ml of water (can adjust according to your cooking style and taste).
If chicken, leave for two whistles and if mutton, let it cook for 6-7 whistles.
Turn off the stove. Serve the soup hot, sprinkling a pinch or two of pepper powder.
For children, soup along with idly/rice is a great combination of a very nutritious meal.
